Lemon Dill Salmon recipe

A light and healthy dinner that will be a big hit! Hearty salmon steaks are marinated and roasted with fresh vegetables to create a simple and easy to prepare dish that is bursting with fresh flavors. Carrots and squash impart a summery, earthy flavor while fresh dill and lemon pepper add a zesty kick.

Ingredients:

  • 4 six ounce salmon steaks, with 4 sheets of aluminium foil
  • 4 carrots, sliced
  • 1 yellow squash, sliced thinly
  • ¼ cup of lemon juice
  • ¼ cup of melted butter
  • 2 teaspoons of dried dill weed
  • 1 teaspoon of lemon pepper

Directions:

  1. Spray the aluminum foil with non-stick spray and set aside.

  2. Place each salmon steak in the middle of a sheet of foil. Surround with sliced carrots and squash.

  3. In small bowl combine lemon juice, butter, dill and lemon pepper. Spoon over the top of each salmon steak. Bring up the sides of the foil and double fold to form a packet, leaving space for heat circulation inside. Refrigerate for 2-4 hours or overnight.

  4. Preheat oven to 450 degrees F (230 degrees C). Cook salmon steaks for about 20 minutes.

  5. Serve immediately with a salad or with couscous.

I grilled the packets and it was tasty... but definitely will not cook as long next time. 10 minutes would probably do it.
